On the palate, this syrupy wine has the perfect balance of sugar and acidity and the impressive freshness that is so characteristic of great Sauternes wines. In terms of pairing, Béatrice recommends a traditional foie gras, slow roasted pork à l'orange or Roquefort cheese.
